That being said its beet season and I made a delicious and easy beet salad the other day.

1 to 2 good size beets
3 Tbsp olive oil
2 Tbsp white wine vinegar
3 garlic cloves minced
2-3 scallions or shallot tops diced

Start off by cutting the tops and bottoms or your beets and place them in boiling water for at least 45 minutes so they are nice and tender. When you can stick a fork in them run the beets under cold water and slip their skins off. Dice them and put them in a bowl with all your other ingredients. Stir to coat evenly and enjoy!
